Breakfast Scramble

This is a delicious breakfast!!  One day my creative juices were flowing again, and I came up with this recipe.

Breakfast Scramble

Serves about 4 people.

  • 1 large potato, diced
  • 2 eggs, lightly beaten
  • chopped meat of your choice:  deli, pepperoni, sausage, or bacon…
  • 1/4-1/2 cup cheese

Fill skillet with 1 to 2 T olive oil.  Place diced potato in skillet and cook until you can pierce with a fork, stirring periodically. 

Add eggs, meat, and cheese.  Scramble and cook for a few minutes.

Top with salt and pepper.

EAT!
